Thai Basil Coconut Curry







Thai Basil Coconut Curry 
Serves 2-3 people


Ingredients

1-2 cups rice of your choosing: brown, white, or coconut! 

Curry--

1 TBS olive oil 
1 heaping tsp ginger powder
1/4 cup minced onion
2 TBS minced garlic 
1 TBS red curry paste 
1 heaping tsp turmeric
1 can Thai Kitchen Coconut Milk
2 TBS coconut sugar 
1 tsp salt

Stir fry--

1-2 TBS olive oil
1 large onion, sliced
1-2 cups sliced mushrooms 
1 sliced bell pepper 
1-2 cups broccoli 
Salt and pepper, to taste 
Chopped basil, a lot! 
Peas (optional)

Toppings--

Chopped green onion
Chopped peanuts 
Salt to taste 

Directions
Make rice 

Heat olive oil in pan over medium heat
Add ginger 
Add minced onion
Cook 2-3 minutes 
Add garlic
Cook 2-3 more minutes 
Add curry paste and turmeric
Mix and let cook for a few minutes, stirring occasionally. Don't let it burn!
Add coconut milk and mix well 
Stir in coconut sugar and salt
Simmer 

In a large pan, heat olive oil
Add onions and mushrooms
Let cook until onion is translucent
Add sliced pepper and broccoli 
Let cook until veggies are soft
Add peas
Salt and pepper to taste 
Add curry sauce to veggies 
Mix in basil 
Cover and let sit, stirring occasionally until basil is steamed and soft and all the flavors mesh together

Spoon mixture over rice and top with green onion and chopped peanuts, enjoy!!!!
